Ingredients
Scale
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- 1/2 cup sour cream (for extra moisture)
- 1/4 cup hot water (to dissolve cocoa powder)
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the cups with butter or oil.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In a separate bowl, beat the eggs and then mix in the milk, melted butter, vanilla extract, and sour cream. Stir until the mixture is smooth.
- In a small bowl, dissolve the cocoa powder in hot water, then add it to the wet ingredients, stirring until combined.
- Pour the wet ingredients into the dry ingredients and stir gently to combine. Be careful not to overmix. The batter should be thick and slightly lumpy.
- Fold in the chocolate chips, ensuring they’re evenly distributed throughout the batter.
- Divide the batter evenly between the muffin cups, filling each about 3/4 full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean (or with just a few moist crumbs). Avoid overbaking to keep them moist.
- Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
- Serve warm or at room temperature. Enjoy your delicious, Costco-inspired chocolate muffins!
Notes
- If you prefer a richer chocolate flavor, you can add 1/4 cup more cocoa powder and increase the sugar by 2 tablespoons.
- For an extra fudgy texture, you can add an additional 1/2 cup of sour cream or Greek yogurt to the batter.
- These muffins freeze well! Just let them cool completely, then wrap them in plastic wrap or foil and store them in an airtight container for up to 3 months.
- Try adding a sprinkle of coarse sugar on top before baking for a sweet, crunchy topping.
