Description

These homemade Costco-style chocolate muffins are moist, fluffy, and packed with rich chocolate flavor. With a soft crumb and a slight hint of sweetness, these muffins are a perfect treat for chocolate lovers.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup sour cream (for extra moisture)
  • 1/4 cup hot water (to dissolve cocoa powder)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the cups with butter or oil.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, beat the eggs and then mix in the milk, melted butter, vanilla extract, and sour cream. Stir until the mixture is smooth.
  4. In a small bowl, dissolve the cocoa powder in hot water, then add it to the wet ingredients, stirring until combined.
  5. Pour the wet ingredients into the dry ingredients and stir gently to combine. Be careful not to overmix. The batter should be thick and slightly lumpy.
  6. Fold in the chocolate chips, ensuring they’re evenly distributed throughout the batter.
  7. Divide the batter evenly between the muffin cups, filling each about 3/4 full.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean (or with just a few moist crumbs). Avoid overbaking to keep them moist.
  9. Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
  10. Serve warm or at room temperature. Enjoy your delicious, Costco-inspired chocolate muffins!

Notes

  • If you prefer a richer chocolate flavor, you can add 1/4 cup more cocoa powder and increase the sugar by 2 tablespoons.
  • For an extra fudgy texture, you can add an additional 1/2 cup of sour cream or Greek yogurt to the batter.
  • These muffins freeze well! Just let them cool completely, then wrap them in plastic wrap or foil and store them in an airtight container for up to 3 months.
  • Try adding a sprinkle of coarse sugar on top before baking for a sweet, crunchy topping.
