Description

  • 3/4 cup cottage cheese

  • 2 large eggs

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon (optional)
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. In a large bowl, mix mashed bananas, cottage cheese, brown sugar, eggs, melted butter, and vanilla until smooth.
  3. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
  4. Add dry ingredients to the wet mixture and stir until just combined. Fold in nuts or chocolate chips if using.
  5. Pour batter into the prepared loaf pan and smooth the top.
  6. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
