- 3 ripe bananas, mashed
- 3/4 cup cottage cheese
- 1/2 cup brown sugar
- 2 large eggs
- 1/4 cup melted butter or coconut oil
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp cinnamon (optional)
- 1/4 tsp salt
- 1/2 cup chopped walnuts or chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
- In a large bowl, mix mashed bananas, cottage cheese, brown sugar, eggs, melted butter, and vanilla until smooth.
- In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
- Add dry ingredients to the wet mixture and stir until just combined. Fold in nuts or chocolate chips if using.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

- Use full-fat or low-fat cottage cheese for best texture.
- Blend cottage cheese for a smoother texture if you prefer no curds in the bread.
- This banana bread freezes well—wrap tightly and freeze for up to 3 months.
