For the Pancake Bites:

1 ripe banana, mashed

½ cup cottage cheese

1 egg

½ cup rolled oats

½ teaspoon cinnamon

½ teaspoon baking powder

1 teaspoon vanilla extract

1 tablespoon honey or maple syrup (optional)

¼ cup mini chocolate chips or blueberries (optional)

Cooking spray or butter (for greasing the muffin tin)

Instructions

Preheat oven to 350°F (175°C). Grease a mini muffin tin with butter or spray.

Blend banana, cottage cheese, egg, oats, cinnamon, baking powder, vanilla, and sweetener (if using) until smooth.

Stir in chocolate chips or blueberries, if using.

Spoon batter into muffin tin, filling each cup about ¾ full.

Bake 12–15 minutes or until golden and set.

Cool slightly before removing from the tin. Serve warm or cold.
