Description

This Cottage Cheese Buffalo Chicken Dip is a healthier twist on the classic game day favorite. Creamy, spicy, and packed with flavor, it’s perfect for dipping chips, veggies, or spreading on sandwiches. A crowd-pleaser that everyone will love!

Ingredients

Scale
  • 2 cups cooked and shredded chicken (about 2 medium-sized chicken breasts)
  • 1 cup cottage cheese
  • ½ cup buffalo wing sauce (adjust to taste)
  • ½ cup ranch dressing or Greek yogurt
  • 1 cup shredded cheddar cheese (divided)
  • ¼ cup blue cheese crumbles (optional)
  • 1 tbsp olive oil (optional, for sautéing chicken if not pre-cooked)
  • Salt and pepper to taste
  • Garnish: chopped green onions or parsley

Instructions

  • Prepare the Chicken:

    • If starting with raw chicken, heat olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper, then cook until fully done (internal temperature of 165°F). Shred the chicken using two forks.
  • Mix the Dip:

    • Preheat your oven to 350°F (175°C).
    • In a large mixing bowl, combine the shredded chicken, cottage cheese, buffalo wing sauce, ranch dressing (or Greek yogurt), and half of the shredded cheddar cheese. Mix well until all ingredients are evenly distributed.
  • Assemble the Dip:

    • Transfer the mixture into an oven-safe baking dish. Spread it out evenly.
    • Sprinkle the remaining shredded cheddar cheese on top, along with blue cheese crumbles if using.
  • Bake:

    • Bake in the preheated oven for 20-25 minutes, or until the dip is heated through and the cheese on top is bubbly and golden brown.
  • Serve:

    • Remove from the oven and let it cool slightly. Garnish with chopped green onions or parsley.
    • Serve warm with tortilla chips, celery sticks, carrot sticks, or spread on sandwiches.

Notes

  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or oven before serving.
  • Custom Variations: Add diced jalapeños or bell peppers for extra texture and flavor. Use low-fat versions of dairy products to make it even healthier.
