Description

These Cottage Cheese Egg Bites are the perfect high-protein, low-carb snack or breakfast. With a creamy texture from the cottage cheese and fluffy eggs, these bites are baked to perfection, making them easy to grab and go. Customize them with your favorite veggies, herbs, and cheese for a deliciously satisfying treat.

Ingredients

Scale
  • 6 large eggs
  • ½ cup cottage cheese (full-fat or low-fat)
  • ½ cup shredded cheese (cheddar, mozzarella, or your favorite variety)
  • ¼ cup milk (dairy or non-dairy)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder (optional)
  • 1 tablespoon fresh chives, chopped (optional)
  • ¼ cup diced bell peppers (optional)
  • ¼ cup spinach, chopped (optional)
  • ¼ cup cooked bacon, crumbled (optional)

Instructions

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or line it with silicone muffin cups.
  2. Prepare the Egg Mixture:

    • In a large bowl, whisk together the eggs, cottage cheese, shredded cheese, milk, salt, pepper, and garlic powder until smooth and well combined.
  3. Add Veggies and Bacon (Optional):

    • If using, fold in the diced bell peppers, spinach, bacon, and fresh chives into the egg mixture. Mix until evenly distributed.
  4. Fill the Muffin Tin:

    • Pour the egg mixture evenly into the muffin cups, filling each about ¾ of the way full.
  5. Bake:

    • Bake in the preheated oven for 18-20 minutes, or until the egg bites are set in the center and slightly golden around the edges. You can test with a toothpick; if it comes out clean, they’re ready.
  6. Cool and Serve:

    • Let the egg bites cool in the muffin tin for 5 minutes, then transfer them to a wire rack to cool completely, or serve warm.
  7. Enjoy:

    • Serve immediately as a snack, breakfast, or meal prep for the week!

Notes

  • These egg bites can be stored in the refrigerator for up to 4 days, making them perfect for meal prep.
  • You can freeze the egg bites for up to 1 month. Reheat them in the microwave or oven before serving.
  • Feel free to customize these with your favorite mix-ins, such as onions, mushrooms, or sausage.
  • For a dairy-free version, substitute cottage cheese and cheese with dairy-free alternatives.
