Description

This Cottage Cheese Egg Salad Sandwich combines creamy cottage cheese with perfectly cooked eggs, fresh dill, and tangy sweet pickle relish, all nestled between flaky croissants. It’s a delicious and nutritious option for lunch or a light meal, topped with fresh avocado, tomato, and lettuce.

  • 7 large eggs
  • 1/2 cup cottage cheese
  • 2 tablespoons sweet pickle relish
  • 2 tablespoons chopped fresh dill
  • 2 teaspoons Dijon mustard
  • Kosher salt and freshly ground black pepper, to taste
  • 4 croissants, split
  • 1 avocado, halved, pitted, peeled, and sliced
  • 1 large beefsteak tomato, sliced
  • 1/2 head bibb lettuce, leaves separated

Instructions

  • Cook the Eggs:
    Preheat your air fryer to 250°F. Place the eggs in the air fryer basket and cook for 16 to 18 minutes, until both the whites and yolks are completely set.
  • Cool and Peel the Eggs:
    Once done, remove the eggs from the air fryer and rinse them under cold water until cool enough to handle. Carefully peel the eggs and roughly chop them.
  • Make the Egg Salad:
    In a large bowl, combine the chopped eggs, cottage cheese, sweet pickle relish, dill, and Dijon mustard. Season with kosher salt and freshly ground black pepper to taste.
  • Assemble the Sandwiches:
    Spread the egg salad evenly over the bottom halves of the croissants. Top with avocado slices, tomato slices, and lettuce leaves. Place the top halves of the croissants on each sandwich.
