Instructions
- Prepare the dough:
- In a large mixing bowl, combine the cottage cheese, flour, baking powder, and salt. Mix until well combined.
- Add the olive oil (or melted butter) and start adding the warm water a little at a time, stirring until a dough forms. You may need slightly more or less water depending on the consistency of your cottage cheese.
- Knead the dough for about 5-7 minutes, until smooth and elastic. If the dough is too sticky, add a little more flour; if it’s too dry, add a touch more water.
- Rest the dough:
- Cover the dough with a damp cloth or plastic wrap and let it rest for about 20-30 minutes.
- Roll the flatbreads:
- After the dough has rested, divide it into 6-8 equal portions. Roll each portion into a ball and then flatten each ball into a round disc, about 1/4 inch thick. You can roll the dough out on a lightly floured surface.
- Cook the flatbread:
- Heat a skillet or griddle over medium-high heat. Once hot, cook each flatbread one at a time. Place the rolled dough onto the skillet and cook for 2-3 minutes until bubbles form on the surface.
- Flip the flatbread and cook for another 1-2 minutes on the other side until golden brown spots appear and the bread is cooked through.
- Serve:
- Remove from the pan and brush with a little extra butter or olive oil if desired. Serve warm with your favorite dips, curries, or soups.
