Description

A creamy, high-protein ice cream made with blended cottage cheese, offering a healthier alternative to traditional ice creams. Perfect for those looking to indulge guilt-free while enjoying a rich and satisfying treat.ย

Ingredients

Scale
  • 2 cups full-fat cottage cheese
  • 1/3 cup liquid sweetener (sugar-free honey or agave syrup)
  • 2 tablespoons peanut butter (or almond/cashew butter)
  • 1 teaspoon vanilla extract (optional)
  • 2 tablespoons chocolate chips (optional)

Instructions

  1. Place the cottage cheese in a blender and blend on high speed for 1โ€“2 minutes until smooth and creamy.
  2. Add the liquid sweetener and peanut butter (or almond/cashew butter) to the blended cottage cheese. If using vanilla extract, add it now. Blend again on medium speed until well combined.
  3. Gently stir in the chocolate chips using a spatula.
  4. Transfer the mixture into a freezer-safe container, smoothing the top with a spatula. Cover the container to prevent ice crystals from forming.
  5. Place the container in the freezer and freeze for at least 3โ€“4 hours.
  6. Before serving, remove the ice cream from the freezer and let it sit at room temperature for about 15โ€“20 minutes to soften.

Notes

  • For added flavor, try substituting peanut butter with almond or cashew butter.
  • Use sugar-free sweeteners if youโ€™re aiming for a lower-calorie option.
  • Customize by folding in fresh fruits like strawberries or bananas before freezing.
