Description
A creamy, high-protein ice cream made with blended cottage cheese, offering a healthier alternative to traditional ice creams. Perfect for those looking to indulge guilt-free while enjoying a rich and satisfying treat.
Ingredients
Scale
- 2 cups full-fat cottage cheese
- 1/3 cup liquid sweetener (sugar-free honey or agave syrup)
- 2 tablespoons peanut butter (or almond/cashew butter)
- 1 teaspoon vanilla extract (optional)
- 2 tablespoons chocolate chips (optional)
Instructions
- Place the cottage cheese in a blender and blend on high speed for 1–2 minutes until smooth and creamy.
- Add the liquid sweetener and peanut butter (or almond/cashew butter) to the blended cottage cheese. If using vanilla extract, add it now. Blend again on medium speed until well combined.
- Gently stir in the chocolate chips using a spatula.
- Transfer the mixture into a freezer-safe container, smoothing the top with a spatula. Cover the container to prevent ice crystals from forming.
- Place the container in the freezer and freeze for at least 3–4 hours.
- Before serving, remove the ice cream from the freezer and let it sit at room temperature for about 15–20 minutes to soften.
Notes
- For added flavor, try substituting peanut butter with almond or cashew butter.
- Use sugar-free sweeteners if you’re aiming for a lower-calorie option.
- Customize by folding in fresh fruits like strawberries or bananas before freezing.
