Ingredients
Scale
- 1 tablespoon olive oil
- 1/2 medium onion, diced
- 2 cups fresh spinach, chopped
- 1 cup (240g) cottage cheese
- 4 large eggs
- 1/2 cup (120ml) milk (any variety)
- 1 cup (100g) shredded cheese (cheddar, mozzarella, or your favorite variety)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper to taste
- 1/4 teaspoon dried basil (optional)
- Fresh parsley or chives for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish or quiche pan with non-stick spray or butter.
- In a medium skillet, heat olive oil over medium heat. Add the diced onion and cook for 3-4 minutes, or until softened.
- Add the chopped spinach to the skillet and cook for an additional 2-3 minutes, until wilted. Remove from heat and set aside to cool slightly.
- In a large bowl, whisk together the eggs, milk, cottage cheese, shredded cheese, garlic powder, onion powder, salt, pepper, and dried basil (if using). Mix until well combined.
- Stir in the cooked onion and spinach mixture into the egg mixture, then pour the combined mixture into the prepared pie dish.
- Bake in the preheated oven for 30-35 minutes, or until the quiche is set and golden on top. A knife inserted into the center should come out clean.
- Let the quiche cool for 5-10 minutes before slicing. Garnish with fresh parsley or chives if desired.
- Serve warm or at room temperature and enjoy!
Notes
- You can add other vegetables like bell peppers, mushrooms, or tomatoes to the quiche for added flavor and nutrition.
- If you prefer a dairy-free version, use non-dairy milk and a dairy-free cheese substitute.
- This quiche is a great make-ahead option and can be stored in the refrigerator for up to 3 days.
