Description

A healthy and delicious crustless quiche made with cottage cheese, fresh spinach, and a blend of eggs and seasonings. This quiche is perfect for a low-carb breakfast, brunch, or even a light dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1/2 medium onion, diced
  • 2 cups fresh spinach, chopped
  • 1 cup (240g) cottage cheese
  • 4 large eggs
  • 1/2 cup (120ml) milk (any variety)
  • 1 cup (100g) shredded cheese (cheddar, mozzarella, or your favorite variety)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 1/4 teaspoon dried basil (optional)
  • Fresh parsley or chives for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish or quiche pan with non-stick spray or butter.
  2. In a medium skillet, heat olive oil over medium heat. Add the diced onion and cook for 3-4 minutes, or until softened.
  3. Add the chopped spinach to the skillet and cook for an additional 2-3 minutes, until wilted. Remove from heat and set aside to cool slightly.
  4. In a large bowl, whisk together the eggs, milk, cottage cheese, shredded cheese, garlic powder, onion powder, salt, pepper, and dried basil (if using). Mix until well combined.
  5. Stir in the cooked onion and spinach mixture into the egg mixture, then pour the combined mixture into the prepared pie dish.
  6. Bake in the preheated oven for 30-35 minutes, or until the quiche is set and golden on top. A knife inserted into the center should come out clean.
  7. Let the quiche cool for 5-10 minutes before slicing. Garnish with fresh parsley or chives if desired.
  8. Serve warm or at room temperature and enjoy!

  • You can add other vegetables like bell peppers, mushrooms, or tomatoes to the quiche for added flavor and nutrition.
