Ingredients
Scale
For the Dumplings:
- 4 large ripe peaches, peeled and pitted
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, cold and cut into small cubes
- 1/2 cup buttermilk
For the Syrup:
- 1 cup granulated sugar
- 1 cup water
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 tablespoons unsalted butter
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large mixing bowl, whisk together flour, baking powder, and salt.
- Cut the cold butter into the flour mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Gradually add the buttermilk to the flour mixture, stirring until the dough just comes together. Be careful not to overmix.
- Gently roll out the dough on a lightly floured surface into a rectangle, about 1/4 inch thick.
- Cut the dough into squares large enough to wrap around each peach (about 4-inch squares).
- Place a peeled and pitted peach in the center of each square of dough, then fold the dough over the peach to form a neat packet.
- In a medium saucepan, combine sugar, water, vanilla extract, cinnamon, nutmeg, and butter. Bring to a simmer over medium heat, stirring occasionally until the sugar dissolves.
- Pour the syrup into the prepared baking dish, then place the dumplings into the syrup, leaving a little space between each one.
- Bake the dumplings for 30-35 minutes, or until the dough is golden and the peaches are tender.
- Remove from the oven and let cool for a few minutes before serving.
- Serve warm with a drizzle of syrup, and top with a scoop of vanilla ice cream or whipped cream if desired.
Notes
- If you don’t have buttermilk, you can substitute with regular milk mixed with 1 tablespoon of lemon juice or vinegar.
- You can also use canned peaches if fresh ones aren’t available, but fresh peaches will give a better texture.
- The syrup can be made ahead of time and stored in the fridge for up to a week.
