  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 1 tablespoon lemon juice (optional, for brightness)


Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook pasta according to the package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
  2. Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Season the chicken strips with salt, pepper, smoked paprika, and Italian seasoning. Add the chicken to the skillet and cook for 6-7 minutes, until golden and cooked through. Remove from the skillet and set aside.
  3. Make the cowboy butter sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes, until fragrant. Stir in the chicken broth and let it simmer for 2-3 minutes.
  4. Finish the sauce: Add the heavy cream and bring to a simmer. Stir in the Parmesan cheese, and cook for another 2 minutes until the sauce thickens. If it becomes too thick, add a little pasta water to reach your desired consistency.
