Description

These Cowboy Butter Steak Sliders are a mouthwatering combination of tender grilled steak, sweet caramelized onions, and creamy Havarti cheese, all sandwiched between buttery slider buns. Served with a rich and zesty cowboy butter, these sliders are perfect for parties or a fun family dinner!

For the Sliders:

  • 1 1/2 lbs boneless steak (e.g., ribeye, filet, or sirloin)
  • Neutral oil, as needed
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste
  • 3 sweet onions, thinly sliced
  • 9 slider buns
  • 3/4 lb sliced Havarti cheese

For the Cowboy Butter:

  • 1 stick unsalted butter, at room temperature
  • 4 garlic cloves, minced
  • Zest and juice of 1/2 lemon
  • 1 tbsp Dijon mustard
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp dried thyme
  • 1 tsp red pepper flakes
  • 1 tbsp chives, minced
  • 2 tbsp fresh parsley, minced
  • Kosher salt and pepper, to taste

Instructions

  • Prepare Steaks: Trim excess fat and silver skin from the steaks. Rub with oil and season generously with salt and pepper. Wrap in plastic wrap and refrigerate for a few hours.
  • Make Cowboy Butter: Melt the butter in a saucepan over low heat. Add lemon juice and zest, garlic, Dijon mustard, and dry seasonings, whisking until combined. Remove from heat, add chives and parsley, and season with salt and pepper to taste. Set aside a few tablespoons for grilling; reserve the rest for brushing slider buns.
  • Cook Steak: Preheat grill to medium-high with an indirect heat zone. Let steaks sit at room temperature for 30 minutes. Grill steaks over direct heat for about 2-3 minutes per side, brushing with cowboy butter as they cook. After 5-6 minutes, move to indirect heat until desired temperature is reached. Let steaks rest under tented foil for 10 minutes, then slice into strips.
  • Caramelize Onions: Place a cast iron skillet on the grill over direct heat. Add a few tablespoons of butter, then add sliced onions. Cook, stirring occasionally, for about 15 minutes until caramelized.
  • Assemble Sliders: Preheat oven to broil. Line a baking sheet with parchment paper. Separate the slider buns, brushing the insides with remaining cowboy butter. Add Havarti cheese to both sides, then layer caramelized onions on the bottom buns. Place sliced steak on the onions, then broil for 1-2 minutes until cheese melts. Top with the other half of the buns.
  • Serve: Slice and enjoy the sliders warm!

  • For added flavor, marinate the steak in cowboy butter for a few hours before grilling.
