- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 cups old-fashioned rolled oats
- 1 cup semi-sweet chocolate chips
- 1 cup shredded sweetened coconut
- 1 cup chopped pecans
Instructions
- Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined.
- Fold in oats, chocolate chips, coconut, and pecans.
- Spread the batter evenly into the prepared pan.
- Bake for 25–30 minutes or until the edges are golden and a toothpick inserted into the center comes out clean.
- Allow to cool completely in the pan before cutting into bars.
Notes
- For a gluten-free version, substitute with gluten-free oats and flour blend.
- Add a pinch of cinnamon or nutmeg for extra warmth.
