Description

Chewy and hearty cookie bars loaded with oats, chocolate chips, coconut, and pecans—packed with flavors that bring the spirit of the Wild West to your dessert table.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 1 cup semi-sweet chocolate chips
  • 1 cup shredded sweetened coconut
  • 1 cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  6. Fold in oats, chocolate chips, coconut, and pecans.
  7. Spread the batter evenly into the prepared pan.
  8. Bake for 25–30 minutes or until the edges are golden and a toothpick inserted into the center comes out clean.
  9. Allow to cool completely in the pan before cutting into bars.

Notes
