Ingredients

Scale
  • For the Meatloaf:
    • 1 pound ground beef (80/20 mix)
    • ¾ cup onions, finely chopped
    • ⅓ cup seasoned bread crumbs
    • ¼ cup sweet honey barbecue sauce
    • 1 large egg, beaten
    • 2 teaspoons chili powder
  • For the Potato Layer:
    • 24 ounces mashed potatoes (pre-cooked or homemade)
    • Butter & milk (for mashing potatoes)
    • ⅔ cup Mexican style cheese, shredded
    • Bacon bits (to mix into potatoes)
    • French fried onions (for topping)

Instructions

  • Prepare the Meatloaf:
    • In a large mixing bowl, combine ground beef, chopped onions, seasoned bread crumbs, barbecue sauce, beaten egg, and chili powder. Mix well and press the mixture into a greased baking dish.
  • Bake:
    • Preheat the oven to 375°F (190°C). Bake the meatloaf for about 25 minutes.
  • Prepare the Potatoes:
    • While the meatloaf is baking, mash the pre-cooked potatoes with butter, milk, and your choice of seasonings. Stir in bacon bits and some French fried onions.
  • Assemble the Casserole:
    • Once the meatloaf is baked, layer the mashed potatoes evenly over the meatloaf. Top with shredded cheese and additional French fried onions.
  • Broil:
    • Broil the casserole until the cheese is bubbly and golden brown, about 5 minutes.

Notes
