Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until soft, about 3–4 minutes.
  2. Add garlic and ginger; sauté for 30 seconds until fragrant.
  3. Add carrots and cook for another 2–3 minutes, stirring occasionally.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add shredded chicken and soy sauce (if using). Simmer for 5 minutes to blend flavors.
  6. Add vermicelli noodles and cook according to package instructions, usually about 3–4 minutes.
  7. Season with salt and pepper to taste.
  8. Ladle soup into bowls and garnish with sliced green onions and fresh herbs if desired. Serve hot.

Notes

  • You can use angel hair pasta broken into small pieces if vermicelli is unavailable.
  • For extra flavor, add a splash of lemon juice or a pinch of crushed red pepper flakes.
