- 4 salmon fillets (6 oz each), skin removed
- 1/2 cup cooked shrimp, chopped
- 1/2 cup lump crab meat (drained)
- 4 oz cream cheese, softened
- 1/4 cup mayonnaise
- 1/4 cup grated Parmesan cheese
- 2 tablespoons green onions, finely chopped
- 1 clove garlic, minced
- 1/2 teaspoon Old Bay seasoning (or Cajun seasoning)
- Juice of 1/2 lemon
- Salt and pepper, to taste
- 1 tablespoon olive oil or melted butter (for brushing)
- Lemon wedges and fresh parsley, for garnish
Instructions
- Preheat oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease it.
- In a bowl, combine chopped shrimp, crab meat, cream cheese, mayo, Parmesan, green onions, garlic, lemon juice, and seasoning. Mix until creamy and well blended.
- Using a sharp knife, cut a deep slit (pocket) lengthwise into the side of each salmon fillet, being careful not to cut all the way through.
- Season salmon with salt and pepper. Spoon stuffing mixture into each pocket, packing it in generously.
- Place stuffed fillets into the prepared baking dish. Brush tops with olive oil or melted butter.
- Bake for 18–22 minutes, or until salmon is cooked through and flakes easily with a fork.
- Garnish with lemon wedges and fresh parsley. Serve hot with rice, roasted veggies, or a light salad.
Notes
- Use cooked or canned shrimp/crab for convenience.
- Add a dash of hot sauce or Cajun spice if you like heat.
- This dish pairs beautifully with garlic mashed potatoes or herbed quinoa.
