  • 4 salmon fillets (6 oz each), skin removed
  • 1/2 cup cooked shrimp, chopped
  • 1/2 cup lump crab meat (drained)
  • 4 oz cream cheese, softened
  • 1/4 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons green onions, finely chopped
  • 1 clove garlic, minced
  • 1/2 teaspoon Old Bay seasoning (or Cajun seasoning)
  • Juice of 1/2 lemon
  • Salt and pepper, to taste
  • 1 tablespoon olive oil or melted butter (for brushing)
  • Lemon wedges and fresh parsley, for garnish


Instructions

  1. Preheat oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease it.
  2. In a bowl, combine chopped shrimp, crab meat, cream cheese, mayo, Parmesan, green onions, garlic, lemon juice, and seasoning. Mix until creamy and well blended.
  3. Using a sharp knife, cut a deep slit (pocket) lengthwise into the side of each salmon fillet, being careful not to cut all the way through.
  4. Season salmon with salt and pepper. Spoon stuffing mixture into each pocket, packing it in generously.
  5. Place stuffed fillets into the prepared baking dish. Brush tops with olive oil or melted butter.
  6. Bake for 18–22 minutes, or until salmon is cooked through and flakes easily with a fork.
  7. Garnish with lemon wedges and fresh parsley. Serve hot with rice, roasted veggies, or a light salad.
