Description

This Cranberry Brie & Mozzarella Grilled Sandwich is a deliciously melty and savory-sweet treat! With creamy brie, gooey mozzarella, and tangy cranberry sauce, all toasted to perfection, it’s the ultimate comfort food. Perfect for lunch or a cozy dinner.

Ingredients

Scale
  • 2 slices of your favorite bread (sourdough, whole wheat, or white)
  • 2 tablespoons butter, softened
  • 2 ounces brie cheese, sliced
  • 2 ounces mozzarella cheese, sliced or shredded
  • 2 tablespoons cranberry sauce (preferably homemade or good-quality store-bought)
  • 1 teaspoon fresh thyme (optional, for garnish)

Instructions

  1. Prepare the Sandwich: Spread 1 tablespoon of softened butter on one side of each slice of bread.
  2. Layer the Ingredients: On the unbuttered side of one slice of bread, layer the brie cheese, mozzarella cheese, and a spoonful of cranberry sauce. Place the second slice of bread on top, buttered side out.
  3. Grill the Sandwich: Heat a non-stick skillet over medium heat. Once hot, place the sandwich in the skillet. Grill for about 3-4 minutes per side, pressing down gently with a spatula, until the bread is golden brown and crispy, and the cheese is melted.
  4. Serve: Once the sandwich is toasted to perfection, remove it from the skillet. Cut in half and garnish with fresh thyme if desired. Serve hot and enjoy!

Notes

  • Add-ins: If you want extra flavor, you can add a handful of arugula or spinach to the sandwich before grilling.
  • Cheese Variation: Swap the mozzarella for provolone or gouda for a different flavor profile.
  • Bread Options: This sandwich works well with a variety of breads. A crusty baguette or a soft brioche would also be great options.
  • Cranberry Sauce: If you don’t have cranberry sauce, you can use a bit of chutney or any other fruit spread that you like.
