Description

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1/4 cup powdered sugar (for topping, optional)

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Mix well and press the mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and set aside.
  3. In a large bowl, beat the softened cream cheese and sugar together until smooth and creamy, about 3 minutes.
  4. Add the vanilla extract and mix until combined.
  5. Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next.
  6. Pour the cream cheese mixture over the crust in the springform pan.
  7. Bake for 55-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake in for 1 hour.
  8. After 1 hour, remove the cake from the oven and allow it to cool at room temperature for 30 minutes.
  9. Refrigerate for at least 4 hours or overnight before serving.
  10. Before serving, top with sour cream and a dusting of powdered sugar, if desired.

Notes

  • For a smoother texture, make sure the cream cheese is softened to room temperature before mixing.
  • You can also top your cheesecake with fruit, chocolate ganache, or a berry compote for added flavor and decoration.
  • If you don’t have a springform pan, you can use a regular round cake pan, but it may be trickier to remove the cheesecake.
