- 12 mini sweet bell peppers
- 8 oz cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 2 green onions, finely chopped
- 1 clove garlic, minced
- 1/4 tsp black pepper
- 1/4 tsp smoked paprika (optional)
- Salt to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the mini bell peppers and remove seeds carefully.
- In a bowl, mix softened cream cheese, cheddar cheese, green onions, garlic, black pepper, smoked paprika, and salt until well combined.
- Spoon the cheese mixture into each hollowed pepper.
- Place stuffed peppers on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes until peppers are tender and filling is bubbly and slightly golden.
- Remove from oven and let cool for a few minutes before serving.
Notes
- For a spicy kick, add finely chopped jalapeños to the filling.
- Use different cheeses like pepper jack or mozzarella for variety.
- These can be served cold or warm.
