Description

Sweet mini bell peppers stuffed with a creamy, cheesy cream cheese filling—perfect as an easy appetizer or snack.


Ingredients

  • 12 mini sweet bell peppers
  • 8 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 2 green onions, finely chopped
  • 1 clove garlic, minced
  • 1/4 tsp black pepper
  • 1/4 tsp smoked paprika (optional)
  • Salt to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the mini bell peppers and remove seeds carefully.
  3. In a bowl, mix softened cream cheese, cheddar cheese, green onions, garlic, black pepper, smoked paprika, and salt until well combined.
  4. Spoon the cheese mixture into each hollowed pepper.
  5. Place stuffed peppers on a baking sheet lined with parchment paper.
  6. Bake for 15-20 minutes until peppers are tender and filling is bubbly and slightly golden.
  7. Remove from oven and let cool for a few minutes before serving.

  • For a spicy kick, add finely chopped jalapeños to the filling.
