- 1 lb kielbasa sausage, sliced
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 cup chicken broth
- 2 cups heavy cream
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1/2 cup fresh parsley, chopped (optional, for garnish)
Instructions
- Heat the olive oil in a large pot over medium heat. Add the kielbasa slices and cook until browned, about 5-7 minutes. Remove and set aside.
- In the same pot, add the chopped onion and minced garlic. Cook until the onion is softened, about 3 minutes.
- Add the chicken broth, white beans, kidney beans, dried thyme, and smoked paprika to the pot. Bring to a simmer and cook for 10 minutes.
- Reduce the heat and stir in the heavy cream. Cook for an additional 5-7 minutes, until the soup is heated through and creamy.
- Add the cooked kielbasa back to the soup and stir to combine. Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley if desired.
Notes
- If you prefer a thicker soup, use an immersion blender to blend a portion of the beans and broth.
- For a lighter version, substitute the heavy cream with half-and-half or coconut milk.
- This soup pairs wonderfully with crusty bread for dipping.
