Description

This Creamy Broccoli Casserole is a comforting, cheesy dish that’s perfect for family dinners or holiday feasts. Tender broccoli is baked in a creamy, rich sauce with a crunchy topping, making it an irresistible side dish that everyone will love!

Ingredients

Scale
  • 4 cups fresh broccoli florets (or frozen, thawed and drained)
  • 1 tablespoon olive oil (if using fresh broccoli)
  • 1 (10.5 oz) can cream of mushroom soup (or cream of chicken soup for non-vegetarian)
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese, divided
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 cup crushed buttery crackers (such as Ritz)
  • 2 tablespoons melted butter (for topping)

Instructions

  1. Prepare the Broccoli: If using fresh broccoli, steam or blanch the florets until tender but still bright green (about 5-6 minutes). Drain and set aside. If using frozen broccoli, thaw and drain completely.
  2. Make the Creamy Sauce: In a large mixing bowl, combine the cream of mushroom soup, sour cream, milk, garlic powder, onion powder, and grated Parmesan. Stir until well combined. Add 1/2 cup of the shredded cheddar cheese and mix.
  3. Combine with Broccoli: Add the cooked broccoli to the bowl and stir until the broccoli is evenly coated with the creamy sauce. Season with salt and pepper to taste.
  4. Assemble the Casserole: Transfer the broccoli mixture into a greased 9×13-inch baking dish. Smooth the top to spread it evenly.
  5. Prepare the Topping: In a small bowl, combine the crushed crackers with the melted butter. Sprinkle the cracker mixture over the top of the casserole. Add the remaining 1/2 cup shredded cheddar cheese on top for extra cheesy goodness.
  6. Bake: Preheat your oven to 350°F (175°C). Bake the casserole for 25-30 minutes, or until the top is golden brown and the casserole is bubbly around the edges.
  7. Serve: Remove the casserole from the oven and let it cool for a few minutes before serving. Enjoy!

Notes

  • You can use a mix of different cheeses like mozzarella, Colby, or Gruyère for a unique flavor.
  • For a lighter version, you can use low-fat cream of mushroom soup and reduced-fat sour cream.
  • If you want a more substantial dish, you can add cooked chicken, bacon, or other vegetables like mushrooms or bell peppers to the casserole.
  • This casserole can be prepared in advance. Just assemble the casserole, cover it with foil, and refrigerate. When ready to bake, remove from the fridge and bake as directed, adding a few extra minutes if needed.
