- 2 boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning (divided)
- 1 tablespoon olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 1/4 teaspoon red pepper flakes (optional)
- Chopped parsley, for garnish
Instructions
- Cook linguine in salted boiling water until al dente. Drain and set aside.
- Slice chicken breasts in half horizontally to make thin cutlets. Rub with 1 tablespoon Cajun seasoning.
- Heat olive oil in a skillet over medium-high heat. Add chicken and cook 4–5 minutes per side until cooked through and blackened. Remove and slice into strips.
- In the same pan, melt butter and sauté garlic for 1 minute until fragrant.
- Stir in heavy cream and chicken broth. Bring to a gentle simmer.
- Add mozzarella and Parmesan cheeses, stirring until melted and smooth. Season with remaining Cajun seasoning, salt, pepper, and red pepper flakes if using.
- Toss cooked linguine into the sauce. Add sliced chicken and stir to coat everything evenly.
- Garnish with chopped parsley and serve immediately with extra Parmesan if desired.
