  • 2 boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning (divided)
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • Chopped parsley, for garnish


Instructions

  1. Cook linguine in salted boiling water until al dente. Drain and set aside.
  2. Slice chicken breasts in half horizontally to make thin cutlets. Rub with 1 tablespoon Cajun seasoning.
  3. Heat olive oil in a skillet over medium-high heat. Add chicken and cook 4–5 minutes per side until cooked through and blackened. Remove and slice into strips.
  4. In the same pan, melt butter and sauté garlic for 1 minute until fragrant.
  5. Stir in heavy cream and chicken broth. Bring to a gentle simmer.
  6. Add mozzarella and Parmesan cheeses, stirring until melted and smooth. Season with remaining Cajun seasoning, salt, pepper, and red pepper flakes if using.
  7. Toss cooked linguine into the sauce. Add sliced chicken and stir to coat everything evenly.
  8. Garnish with chopped parsley and serve immediately with extra Parmesan if desired.
