- 1 lb large shrimp, peeled and deveined
- Kosher salt and fresh cracked black pepper, to taste
- 1 tsp Cajun seasoning or Creole seasoning
- ½ tsp dried oregano
- 2 tbsp olive oil
- 6 oz andouille sausage or smoked sausage, thinly sliced
- 10 oz fettuccine pasta
- ½ yellow onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 4 tsp Cajun seasoning or Creole seasoning
- 1 tsp brown sugar
- 2–3 cloves garlic, chopped
- ½ cup crushed tomatoes
- 1 cup chicken broth, sodium-free
- 1 cup heavy cream
- ⅔ cup grated Parmesan cheese
- 1 tbsp parsley, chopped
Instructions
- Prepare the Shrimp: Toss the shrimp with salt, pepper, Cajun seasoning, and oregano.
- Cook the Shrimp: Heat olive oil in a large skillet over medium-high heat. Cook the shrimp for 2 minutes on each side until pink and cooked through. Remove and set aside.
- Cook the Sausage: Add the sausage to the skillet, cooking until browned, about 4-5 minutes. Remove and set aside.
- Cook the Pasta: In a pot of salted boiling water, cook the fettuccine pasta until al dente. Drain and set aside.
- Sauté the Vegetables: In the same skillet, sauté the onion and bell pepper with Cajun seasoning, brown sugar, and a pinch of salt until softened. Add the garlic and cook for another 30 seconds until fragrant.
- Make the Sauce: Stir in the crushed tomatoes, chicken broth, and heavy cream. Simmer for 2-3 minutes, then add the Parmesan cheese and stir until the sauce thickens slightly.
- Combine Everything: Return the pasta, sausage, and shrimp to the skillet, tossing everything in the sauce. Cook for another 2-3 minutes, allowing the flavors to meld together.
- Serve: Garnish with chopped parsley and serve hot.
Notes
Adjust the spice level by increasing or decreasing the Cajun seasoning to taste. This dish pairs well with garlic bread and a fresh salad.
