Description

This Creamy Carrot Salad is a delightful blend of shredded carrots, raisins, and pineapple, all tossed in a creamy, tangy dressing. It’s the perfect side dish to complement any meal or a refreshing snack on its own! Easy to make and perfect for summer picnics or holiday gatherings. 


Ingredients

  • 4 cups shredded carrots (about 6 large carrots)
  • ½ cup mayonnaise
  • ⅓ cup sour cream
  • 1 tablespoon apple cider vinegar
  • 1 cup raisins
  • 8 ounces crushed pineapple (lightly drained, 1 can)
  • Salt and black pepper, to taste

Instructions

  1. Prepare the carrots: Shred the carrots using a box grater or a food processor and place them in a large mixing bowl.
  2. Mix the dressing: In a small bowl, whisk together mayonnaise, sour cream, and apple cider vinegar until smooth.
  3. Combine ingredients: Add the dressing to the shredded carrots. Stir in the raisins and crushed pineapple.
  4. Season and chill: Season with salt and pepper to taste. Mix everything well. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve: Serve the salad chilled as a side dish or a light snack.
