Description

  • 1 tbsp Cornstarch (optional, for thickening)

Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Prepare cherry filling: In a saucepan over medium heat, combine cherries, lemon juice, and cornstarch (if using). Cook for 5-7 minutes until cherries release juice and the mixture thickens slightly. Remove from heat and let cool.
  3. Make the creamy filling: In a bowl, mix softened cream cheese, powdered sugar, vanilla extract, and heavy cream until smooth and creamy.
  4. Prepare the pastry: Unroll the puff pastry sheets and cut them into rectangles or squares (depending on your desired strudel size).
  5. Assemble the strudel: Spread a thin layer of the creamy filling over each pastry rectangle. Spoon the cooled cherry mixture on top. Fold the edges of the pastry over the filling to form a parcel or roll it up like a traditional strudel.
  6. Bake: Brush the strudel with melted butter. Bake for 20-25 minutes or until golden and puffed up.
  7. Cool and serve: Allow the strudel to cool slightly before dusting with powdered sugar. Slice and serve warm.
