- 8 oz pasta (penne, fettuccine, or rotini)
- 1 tablespoon olive oil
- 2 boneless, skinless chicken breasts, diced
- 2 cups broccoli florets
- 3 cups fresh spinach
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup chicken broth
- Salt and pepper, to taste
- Optional: red pepper flakes and fresh parsley for garnish
Instructions
- Cook pasta according to package directions until al dente. In the last 2 minutes of cooking, add broccoli to the boiling water. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced chicken, season with salt and pepper, and cook until golden and cooked through, about 5–7 minutes. Remove from skillet and set aside.
- In the same skillet, add garlic and sauté for 1 minute until fragrant.
- Pour in chicken broth and heavy cream. Bring to a simmer, then stir in Parmesan cheese until melted and the sauce thickens slightly.
- Add cooked chicken, drained pasta and broccoli, and fresh spinach to the sauce. Toss until spinach wilts and everything is evenly coated.
- Adjust seasoning with salt, pepper, and red pepper flakes if using.
- Serve hot, garnished with parsley and additional Parmesan if desired.

- Substitute heavy cream with half-and-half for a lighter version.
- Use rotisserie chicken for a quicker prep.
- Add mushrooms or sun-dried tomatoes for extra flavor.
