Instructions

  • Prepare the Chicken: Season both sides of the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 6-8 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F). Remove chicken from the skillet and set aside.
  • Make the Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Pour in chicken broth and scrape the browned bits from the skillet to deglaze. Simmer for 2-3 minutes to reduce slightly.
  • Add the Cream and Spinach: Stir in heavy cream, Parmesan cheese, and Dijon mustard (if using). Simmer for 3-5 minutes, allowing the sauce to thicken slightly. Add spinach and cook until wilted, stirring occasionally. Add crushed red pepper flakes if desired.
  • Combine the Chicken and Sauce: Return the chicken to the skillet and spoon some of the creamy spinach sauce over the top. Simmer for an additional 2-3 minutes to let the chicken absorb the flavors.
  • Finish and Serve: Stir in lemon juice and garnish with freshly chopped parsley if desired. Serve hot with pasta, rice, or mashed potatoes.
