Ingredients

  • 1 small onion, chopped
  • ½ cup celery, chopped

  • 2 cups half and half
  • 34 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • ¾ cup matchstick carrots
  • 12 cups baby spinach leaves
  • 2 cups diced, cooked chicken breast
  • 1 (16 oz) package potato gnocchi

Instructions

  • Melt the Butter:
    • In a large stock pot, melt the unsalted butter over medium heat.
  • Sauté Vegetables:
    • Add the chopped onion and celery to the pot. Sauté for 5-6 minutes, until they are tender. Then, add the minced garlic and cook for another 30 seconds until fragrant.
  • Add Flour:
    • Sprinkle in the all-purpose flour and cook, stirring regularly, for 1-2 minutes to remove the raw flour taste.
  • Incorporate Dairy:
    • Slowly add the half and half to the pot, followed by the low-sodium chicken broth. Stir well to combine and bring the mixture to a simmer.
  • Add Seasonings and Vegetables:
    • Stir in the dried thyme, matchstick carrots, baby spinach, diced cooked chicken, and potato gnocchi. Mix everything well and allow it to simmer for about 5 minutes, or until the gnocchi is cooked through.
  • Serve:
    • Serve the soup hot and enjoy!
