- ¾ cup matchstick carrots
- 1–2 cups baby spinach leaves
- 2 cups diced, cooked chicken breast
- 1 (16 oz) package potato gnocchi
Instructions
- Melt the Butter:
- In a large stock pot, melt the unsalted butter over medium heat.
- Sauté Vegetables:
- Add the chopped onion and celery to the pot. Sauté for 5-6 minutes, until they are tender. Then, add the minced garlic and cook for another 30 seconds until fragrant.
- Add Flour:
- Sprinkle in the all-purpose flour and cook, stirring regularly, for 1-2 minutes to remove the raw flour taste.
- Incorporate Dairy:
- Slowly add the half and half to the pot, followed by the low-sodium chicken broth. Stir well to combine and bring the mixture to a simmer.
- Add Seasonings and Vegetables:
- Stir in the dried thyme, matchstick carrots, baby spinach, diced cooked chicken, and potato gnocchi. Mix everything well and allow it to simmer for about 5 minutes, or until the gnocchi is cooked through.
- Serve:
- Serve the soup hot and enjoy!
