- Lasagna:
- 9 lasagna noodles
- 2 cups cooked chicken, shredded or diced
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese, divided
- ½ cup grated Parmesan cheese, divided
- 1 cup fresh spinach, chopped (optional)
- Salt and pepper to taste
- White Sauce:
- 4 tbsp unsalted butter
- ¼ cup all-purpose flour
- 3 cups milk
- 1 cup heavy cream
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp dried basil
- ½ tsp dried oregano
- Salt and pepper to taste
Instructions
- Prepare the Noodles: Cook lasagna noodles according to package instructions. Drain and set aside.
- Make the White Sauce:
- In a medium saucepan, melt butter over medium heat.
- Add flour and whisk for 1-2 minutes until lightly golden.
- Slowly pour in milk and heavy cream, whisking constantly to prevent lumps.
- Add garlic powder, onion powder, basil, oregano, salt, and pepper. Continue stirring until sauce thickens, about 5-7 minutes. Remove from heat and set aside.
- Assemble Filling: In a mixing bowl, combine cooked chicken, ricotta cheese, 1 cup mozzarella, ¼ cup Parmesan, spinach (if using), salt, and pepper. Mix until well combined.
- Layer the Lasagna:
- Preheat oven to 375°F (190°C).
- Spread a thin layer of white sauce on the bottom of a 9×13-inch baking dish.
- Layer 3 lasagna noodles over the sauce. Spread ⅓ of the chicken mixture over the noodles, then top with ¼ cup mozzarella and a few spoonfuls of white sauce.
- Repeat layers two more times, ending with a layer of noodles and the remaining white sauce. Top with remaining mozzarella and Parmesan cheese.
- Bake: Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden on top.
- Serve: Let the lasagna cool for 10 minutes before slicing. Serve warm and enjoy!
