Ingredients
Scale
- 8 oz (225g) pasta (fettuccine or penne)
- 2 tbsp olive oil
- 2 boneless, skinless chicken breasts, cut into strips
- 2 cups sliced mushrooms (cremini or button)
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup chicken broth
- 1 tbsp butter
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook pasta according to package directions. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper and cook until golden and cooked through, about 5–6 minutes. Remove and set aside.
- In the same skillet, add butter and sauté mushrooms until browned and tender, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and let simmer for 2 minutes.
- Reduce heat to low, stir in heavy cream and Parmesan cheese. Let simmer until sauce thickens slightly, about 3–5 minutes.
- Add cooked chicken and pasta back to the skillet. Toss to coat everything in the sauce.
- Garnish with fresh parsley and serve warm.
Notes
- Use rotisserie chicken for a quicker version.
- Add spinach or peas for extra vegetables.
- Substitute half-and-half for a lighter sauce.
