Description

A rich and comforting pasta dish made with tender chicken, sautéed mushrooms, and a creamy garlic-Parmesan sauce. Perfect for a cozy dinner.


Ingredients

  • 8 oz (225g) pasta (fettuccine or penne)
  • 2 tbsp olive oil
  • 2 boneless, skinless chicken breasts, cut into strips
  • 2 cups sliced mushrooms (cremini or button)
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1 tbsp butter
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper and cook until golden and cooked through, about 5–6 minutes. Remove and set aside.
  3. In the same skillet, add butter and sauté mushrooms until browned and tender, about 5 minutes.
  4. Add garlic and cook for 1 minute until fragrant.
  5. Pour in chicken broth and let simmer for 2 minutes.
  6. Reduce heat to low, stir in heavy cream and Parmesan cheese. Let simmer until sauce thickens slightly, about 3–5 minutes.
  7. Add cooked chicken and pasta back to the skillet. Toss to coat everything in the sauce.
  8. Garnish with fresh parsley and serve warm.

Notes

  • Use rotisserie chicken for a quicker version.
  • Add spinach or peas for extra vegetables.
  • Substitute half-and-half for a lighter sauce.
