Ingredients

  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken
  • 1 package (9 oz) cheese tortellini
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 tsp dried Italian seasoning
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic; sauté until translucent.
  2. Add carrots and celery; cook for 5 minutes until slightly softened.
  3. Pour in chicken broth and bring to a boil.
  4. Add shredded chicken and tortellini. Cook according to tortellini package instructions, usually 7-9 minutes.
  5. Reduce heat to low and stir in heavy cream, Italian seasoning, salt, and pepper.
  6. Simmer for 5 minutes until heated through.
  7. Serve hot, garnished with fresh parsley.

Notes

  • Use rotisserie chicken for convenience.
  • For a lighter soup, substitute half-and-half for heavy cream.
