- 1 small onion, diced
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 6 cups chicken broth
- 2 cups cooked shredded chicken
- 1 package (9 oz) cheese tortellini
- 1 cup heavy cream
- Salt and pepper to taste
- 1 tsp dried Italian seasoning
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic; sauté until translucent.
- Add carrots and celery; cook for 5 minutes until slightly softened.
- Pour in chicken broth and bring to a boil.
- Add shredded chicken and tortellini. Cook according to tortellini package instructions, usually 7-9 minutes.
- Reduce heat to low and stir in heavy cream, Italian seasoning, salt, and pepper.
- Simmer for 5 minutes until heated through.
- Serve hot, garnished with fresh parsley.
Notes
- Use rotisserie chicken for convenience.
- For a lighter soup, substitute half-and-half for heavy cream.
- Add spinach or kale for extra greens.
