Description

Delight in these creamy cookie squares, featuring a buttery graham cracker crust and a luscious cream cheese filling. Topped with optional chocolate, these squares are perfect for any occasion!

For the Base:

  • 1 ½ cups graham cracker crumbs (or any cookie crumbs)
  • ¼ cup sugar
  • ½ cup unsalted butter, melted

For the Cream Layer:

  • 8 oz (1 package) cream cheese, softened
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract

For the Topping (optional):

  • 1 cup chocolate chips
  • 1 tablespoon vegetable oil

Instructions

  • Prepare the Base: Preheat the oven to 350°F (175°C). Line an 8×8-inch square baking pan with parchment paper. In a bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined. Press the crumb mixture evenly into the bottom of the prepared baking pan. Bake for 10 minutes, then let it cool completely.
  • Make the Cream Layer: In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined and fluffy.
  • Assemble the Layers: Spread the cream layer evenly over the cooled cookie crust. Use a spatula to smooth the top. Place the pan in the refrigerator for at least 2 hours, or until set.
  • Optional Chocolate Topping: Melt the chocolate chips with vegetable oil in the microwave in 30-second intervals, stirring in between until smooth. Drizzle or spread the melted chocolate over the creamy layer. Let it set in the fridge for another 15-20 minutes.
  • Cut and Serve: Once the squares are set, lift them out of the pan using the parchment paper. Cut into squares and serve chilled.
