Description

This Creamy Crockpot Chicken Spaghetti is a delicious and comforting one-pot meal that’s packed with tender chicken, creamy sauce, and a hearty mix of pasta. Set it and forget it with your slow cooker to create the perfect family-friendly dinner that’s creamy, flavorful, and satisfying!

Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup (or another can of cream of chicken soup)
  • 1 cup chicken broth
  • 1 package (8 oz) cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1/2 tsp Italian seasoning (optional)
  • 1/2 lb spaghetti (broken into halves or thirds)
  • Fresh parsley (optional, for garnish)

Instructions

  1. Place the chicken breasts or thighs in the bottom of your slow cooker.
  2. In a separate bowl, mix together the cream of chicken soup, cream of mushroom soup, chicken broth, cream cheese, garlic powder, onion powder, salt, pepper, and Italian seasoning (if using). Stir until smooth and combined.
  3. Pour the creamy mixture over the chicken in the slow cooker, ensuring the chicken is covered with the sauce.
  4. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is fully cooked and shreds easily.
  5. Once the chicken is cooked, remove it from the slow cooker and shred it using two forks.
  6. Return the shredded chicken to the slow cooker, then stir in the shredded mozzarella and cheddar cheese. Stir until the cheese is melted and the sauce becomes creamy.
  7. Break the spaghetti into halves or thirds and add it to the slow cooker. Stir to combine, ensuring the pasta is coated with the creamy sauce.
  8. Cover the slow cooker and cook on low for an additional 30-40 minutes, until the spaghetti is tender and cooked through.
  9. Once the spaghetti is done, give everything a final stir and garnish with fresh parsley if desired.
  10. Serve warm and enjoy this creamy, comforting meal!

Notes

  • You can substitute the cream of mushroom soup with another can of cream of chicken soup if preferred.
  • If you want a little extra flavor, add some cooked bacon bits or sautéed onions to the dish.
  • If you prefer a lighter version, you can substitute the cream cheese with a reduced-fat version and use low-fat cheese.
  • To make this dish gluten-free, simply swap out the regular pasta for gluten-free spaghetti.
