Description

This Creamy Crunchy Chicken Pasta is a delightful blend of crispy chicken, rich creamy sauce, and perfectly cooked pasta. It’s a comforting dish that’s sure to please the entire family, making it ideal for weeknight dinners or special occasions.

For the chicken:

  • 12 cups oil for frying
  • 3 eggs, beaten
  • 2 cups Italian-style breadcrumbs
  • Salt and pepper to taste

For the pasta and sauce:

  • 1/2 red pepper, diced
  • 1/2 green pepper, diced
  • 1 tablespoon minced garlic
  • 2 tablespoons salted butter
  • 2 cups heavy cream
  • 1 cup Parmesan cheese
  • 1 teaspoon Cajun seasoning
  • 1 box of your favorite pasta (linguine or cavatappi)
  • Salt and pepper to taste
  • Parsley for garnish

Instructions

  • Preheat Oil: Preheat oil in a large saucepan.
  • Prepare Chicken: Season chicken with salt and pepper. Dip in egg batter and coat in breadcrumbs.
  • Fry Chicken: Shallow fry chicken on medium-high heat for 3-4 minutes on each side. Finish cooking in the oven while working on the sauce.
  • Make Sauce: Melt butter in a medium saucepan. Add diced peppers and garlic, and sauté until softened. Pour in heavy cream and let it simmer. Add Parmesan cheese, Cajun seasoning, and salt and pepper to taste.
  • Cook Pasta: Toss in cooked pasta (al dente) into the sauce and simmer on low.
  • Assemble: Add cooked chicken, cut into strips, on top of pasta. Garnish with Parmesan cheese and parsley.

Notes

  • For a spicier kick, increase the amount of Cajun seasoning or add some red pepper flakes.
  • Feel free to substitute chicken with shrimp or tofu for a different protein option.
