Description

These creamy, refreshing Benedictine tea sandwiches feature a smooth blend of cucumber, cream cheese, and fresh herbs, making them the perfect addition to any tea party or light lunch. Delicate and flavorful, they are a great choice for gatherings.


Ingredients

  • 1 medium cucumber, peeled and thinly sliced

  • 8 oz cream cheese, softened

  • 2 tablespoons mayonnaise

  • 1 tablespoon Dijon mustard

  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

  • 1 teaspoon garlic powder

  • Salt and pepper to taste

  • 8 slices white or whole wheat bread, crusts removed

  • Fresh parsley or dill for garnish (optional)


Instructions

  1. Prepare the Cucumber: Place the thin cucumber slices in a clean kitchen towel or paper towels, sprinkle with a little salt, and let them sit for 10-15 minutes to draw out excess moisture. Afterward, pat them dry with another towel.

  2. Make the Benedictine Spread: In a medium bowl, combine the softened cream cheese, mayonnaise, Dijon mustard, dill, garlic powder, salt, and pepper. Mix well until smooth and creamy.

  3. Assemble the Sandwiches: Spread a generous layer of the Benedictine spread onto one side of each slice of bread. Top half of the bread slices with the cucumber slices, arranging them evenly.

  4. Finish and Serve: Place the remaining bread slices on top of the cucumber slices, cream cheese side down, to form sandwiches. Slice into quarters or triangles and garnish with fresh parsley or dill, if desired. Serve immediately or refrigerate until ready to serve.

Notes

  • For a fancier presentation, you can use a cookie cutter to shape the sandwiches into circles or other fun shapes.

  • If you prefer a more pronounced cucumber flavor, feel free to add extra cucumber slices inside the sandwich.

 

  • These sandwiches are best served fresh, but they can be made ahead and stored in the fridge for up to a couple of hours.
