Description

Creamy Cucumber Cheddar Salad combines crisp cucumbers with sharp cheddar cheese in a rich and tangy creamy dressing, perfect as a side dish or light lunch.

Ingredients

Scale
  • 3 large cucumbers, thinly sliced
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • Salt and black pepper, to taste
  • 1/4 cup chopped fresh dill or parsley (optional)

Instructions

  1. In a large bowl, combine mayonnaise, sour cream, apple cider vinegar, sugar, salt, and pepper. Whisk until smooth.
  2. Add the sliced cucumbers and shredded cheddar cheese to the dressing. Toss gently to coat.
  3. Sprinkle chopped dill or parsley over the salad and mix lightly.
  4. Chill in the refrigerator for at least 30 minutes to let flavors meld.
  5. Serve cold as a side dish.

Notes

  • Use English cucumbers or seedless cucumbers for less bitterness.
  • For a lighter version, substitute Greek yogurt for sour cream.
  • Add thinly sliced red onions or cherry tomatoes for extra flavor and color.
