Instructions
- In a medium saucepan, whisk together the sugar, cocoa powder, and salt.
- Stir in the milk and place over medium heat. Cook, stirring constantly, until the mixture is hot and the cocoa and sugar are fully dissolved (do not boil).
- Remove from heat and add the chopped chocolate. Stir until completely melted and smooth.
- Stir in the heavy cream and vanilla extract. Mix until fully combined.
- Cover and chill the mixture in the refrigerator for at least 2–4 hours, or overnight for best results.
- Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions (typically 20–25 minutes).
- Transfer the churned ice cream to an airtight container and freeze for at least 2 hours to firm up before serving.

Notes
- For extra richness, you can use all heavy cream (no milk), but the texture will be denser.
- Add mix-ins like chocolate chips, crushed cookies, or swirls of caramel during the last few minutes of churning.
- If you don’t have an ice cream maker, you can freeze the mixture in a shallow dish, stirring every 30–60 minutes until it reaches the desired consistency (about 4 hours).
