Ingredients

Scale

For the Chicken:

  • 4 bone-in, skin-on chicken thighs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil

For the Sauce:

  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese

For the Gnocchi:

  • 12 ounces potato gnocchi
  • 2 cups baby spinach

Instructions

  1. Cook the Chicken:

    • Season the chicken thighs with salt, black pepper, and garlic powder.
    • Heat olive oil in a large skillet over medium-high heat.
    • Sear the chicken skin-side down until golden brown, about 5 minutes.
    • Flip the chicken and cook for another 5 minutes. Remove the chicken and set it aside.
  2. Prepare the Sauce:

    • Reduce the heat to medium and melt butter in the skillet.
    • Sauté garlic and mushrooms for 2 minutes until fragrant.
    • Pour in heavy cream and chicken broth. Stir in thyme, Italian seasoning, and red pepper flakes.
    • Bring to a simmer, then add Parmesan cheese and stir until the cheese melts into the sauce.
  3. Cook the Gnocchi:

    • Stir in the gnocchi and let them cook in the sauce for about 3 minutes.
  4. Combine Everything:

    • Add baby spinach to the skillet and stir until wilted.
    • Nestle the chicken thighs back into the skillet and simmer for 10 minutes, or until the chicken is fully cooked.
  5. Serve:

    • Serve hot with extra Parmesan cheese if desired. Enjoy!

Notes

  • Creaminess Adjustment: For a creamier sauce, you can add extra heavy cream or Parmesan cheese.
  • Vegetable Options: Feel free to add more vegetables like peas or sun-dried tomatoes for extra flavor and color.
  • Chicken Substitutes: You can use boneless, skinless chicken thighs or breasts if preferred, just reduce the cooking time.
