For the Potatoes:

  • 1 lb baby potatoes, halved or quartered
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon dried thyme (optional)
  • 1 teaspoon dried rosemary (optional)

For the Creamy Garlic Sauce:

 

  • 3 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth or vegetable broth
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • 1/2 teaspoon Italian seasoning (optional)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Roast the Potatoes:

    • Preheat your oven to 400°F (200°C).
    • Place the halved or quartered baby potatoes on a baking sheet. Drizzle with olive oil and season with salt, pepper, thyme, and rosemary. Toss to coat the potatoes evenly.
    • Roast the potatoes for 25-30 minutes, or until golden brown and tender, flipping halfway through for even cooking.
  2. Make the Garlic Sauce:

    • While the potatoes are roasting, melt the butter in a large skillet over medium heat.
    • Add the minced garlic and sauté for 1-2 minutes, or until fragrant, being careful not to burn the garlic.
    • Pour in the heavy cream and chicken broth. Stir to combine, and bring the mixture to a simmer.
    • Season with salt, pepper, and Italian seasoning. Continue to simmer for 3-5 minutes, or until the sauce thickens slightly.
    • Stir in the grated Parmesan cheese and cook for an additional 2 minutes until smooth and creamy.
  3. Combine Potatoes and Sauce:

    • Once the potatoes are roasted, remove them from the oven and transfer them to the skillet with the creamy garlic sauce.
    • Toss the potatoes in the sauce, ensuring they are fully coated.
  4. Serve:

    • Garnish with freshly chopped parsley and serve immediately as a delicious side dish with your favorite main course.

Notes

  • Make it Spicy: Add a pinch of red pepper flakes to the garlic sauce for some heat.
  • Substitute Cream: If you prefer a lighter version, you can substitute heavy cream with half-and-half or milk. The sauce may be slightly thinner, but still creamy.
