Ingredients
Scale
For the Potatoes:
- 1 lb baby potatoes, halved or quartered
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 teaspoon dried thyme (optional)
- 1 teaspoon dried rosemary (optional)
For the Creamy Garlic Sauce:
- 3 tablespoons unsalted butter
- 6 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth or vegetable broth
- 1/4 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
- 1/2 teaspoon Italian seasoning (optional)
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
-
Roast the Potatoes:
- Preheat your oven to 400°F (200°C).
- Place the halved or quartered baby potatoes on a baking sheet. Drizzle with olive oil and season with salt, pepper, thyme, and rosemary. Toss to coat the potatoes evenly.
- Roast the potatoes for 25-30 minutes, or until golden brown and tender, flipping halfway through for even cooking.
-
Make the Garlic Sauce:
- While the potatoes are roasting, melt the butter in a large skillet over medium heat.
- Add the minced garlic and sauté for 1-2 minutes, or until fragrant, being careful not to burn the garlic.
- Pour in the heavy cream and chicken broth. Stir to combine, and bring the mixture to a simmer.
- Season with salt, pepper, and Italian seasoning. Continue to simmer for 3-5 minutes, or until the sauce thickens slightly.
- Stir in the grated Parmesan cheese and cook for an additional 2 minutes until smooth and creamy.
-
Combine Potatoes and Sauce:
- Once the potatoes are roasted, remove them from the oven and transfer them to the skillet with the creamy garlic sauce.
- Toss the potatoes in the sauce, ensuring they are fully coated.
-
Serve:
- Garnish with freshly chopped parsley and serve immediately as a delicious side dish with your favorite main course.
Notes
- Make it Spicy: Add a pinch of red pepper flakes to the garlic sauce for some heat.
- Substitute Cream: If you prefer a lighter version, you can substitute heavy cream with half-and-half or milk. The sauce may be slightly thinner, but still creamy.
- Add Veggies: You can add steamed broccoli or green beans to the skillet when tossing the potatoes in the sauce for a complete meal.
