- 12 oz pasta (penne, fettuccine, or your favorite)
- 2 tbsp olive oil
- 2 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tbsp Italian seasoning
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup spinach leaves, fresh
- 1/4 tsp red pepper flakes (optional)
- Fresh basil, for garnish
Instructions
- Cook the pasta according to package instructions until al dente, then drain.
- Season chicken with salt, pepper, and Italian seasoning. Cook in olive oil until golden brown, then slice.
- Sauté garlic, then add heavy cream and chicken broth. Stir in Parmesan cheese until melted.
- Add sun-dried tomatoes and spinach, cooking until spinach wilts.
- Toss cooked pasta with the sauce and add chicken. Serve garnished with fresh basil.
Notes
- For additional flavor, add more garlic or fresh herbs.
- Adjust the consistency of the sauce with more chicken broth or cream if needed.
