Description

Creamy Layered John Wayne Casserole is a hearty, flavorful Tex-Mex-inspired bake loaded with seasoned ground beef, creamy cheese, peppers, and a biscuit crust. This satisfying, layered dish is perfect for feeding a hungry crowd or as a comforting family dinner.

Ingredients

Scale
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (16.3 oz) refrigerated biscuit dough
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese (divided)
  • 1 cup shredded Monterey Jack cheese
  • 1 medium onion, sliced
  • 1 green bell pepper, diced
  • 1 tomato, diced
  • 1 can (4 oz) diced green chilies (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Press the biscuit dough into the bottom of the dish and slightly up the sides to form a crust. Bake for 10 minutes until just lightly golden.
  3. While the crust is baking, cook the ground beef in a skillet over medium heat until browned. Drain any grease, then add taco seasoning and water. Simmer until thickened, about 5 minutes.
  4. In a small bowl, mix sour cream, mayonnaise, half the cheddar cheese, and all of the Monterey Jack cheese. Set aside.
  5. Layer the pre-baked biscuit crust with the seasoned beef, then top with onion slices, diced bell pepper, diced tomato, and green chilies (if using).
  6. Spread the creamy cheese mixture evenly over the top.
  7. Sprinkle the remaining cheddar cheese over everything.
  8. Bake uncovered for 25–30 minutes, until bubbly and golden on top.
  9. Let it rest for 5–10 minutes before slicing and serving.

Notes

  • Customize with jalapeños or hot sauce for an extra kick.
  • Swap out ground beef for ground turkey or plant-based meat for a different variation.
  • Can be assembled ahead and baked just before serving—perfect for meal prep.
