  • 2 cloves garlic, minced
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • ½ cup chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 1 tbsp lemon zest
  • 2 tbsp fresh lemon juice (about 1 lemon)
  • 1 tsp Dijon mustard (optional for extra flavor)
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the chicken:
    • Season the chicken breasts with salt, pepper, garlic powder, and onion powder.
    • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
    • Add the chicken breasts to the skillet and cook for 5-7 minutes per side, or until golden brown and cooked through (internal temperature of 165°F/74°C). Remove the chicken from the skillet and set aside.

    2. Make the creamy lemon Parmesan sauce:

    • In the same skillet, melt 2 tablespoons of butter over medium heat.
    • Add the minced garlic and sauté for 1-2 minutes, until fragrant.
    • Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer and cook for 3-4 minutes until the sauce slightly thickens.
    • Stir in the Parmesan cheese, lemon zest, lemon juice, and Dijon mustard (if using). Continue to cook for 2-3 more minutes, whisking occasionally, until the sauce is creamy and smooth. Season with salt and pepper to taste.

    3. Combine the chicken and sauce:

    • Return the cooked chicken breasts to the skillet, spooning some of the sauce over them. Let the chicken simmer in the sauce for another 2-3 minutes, until the chicken is heated through and fully coated in the creamy sauce.

    4. Serve:
