Instructions
- Sauté Mushrooms:
Melt 2 tablespoons of butter in a pan over medium-high heat. Add sliced mushrooms and cook until their liquid is released and evaporated (about 10–15 minutes). Set aside. - Cook Vegetables:
Melt 1 tablespoon of butter in the same pan. Add onion, carrots, and celery, and cook until tender (about 8–10 minutes). - Add Aromatics:
Stir in chopped garlic and thyme. Cook until fragrant (about 1 minute). - Simmer Soup:
Add chicken broth, wild rice, cooked chicken, and sautéed mushrooms. Bring to a boil, then reduce heat and simmer, covered, until rice is tender (about 20–30 minutes). - Finish with Cream:
Stir in milk and grated Parmesan cheese. Cook until the cheese melts, and season with salt and pepper to taste.
