- 1 can (10.5 oz) cream of onion soup
- 1/2 cup sour cream
- 1/2 cup chicken broth
- 1 medium onion, thinly sliced
- 2 cups prepared stuffing mix
- 2 tbsp butter, melted
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat oven to 350°F (175°C).
- Season chicken breasts with salt and pepper.
- In a skillet, heat olive oil over medium heat and sauté onions until soft and translucent, about 5 minutes.
- In a mixing bowl, combine cream of onion soup, sour cream, and chicken broth.
- Place chicken breasts in a greased baking dish.
- Pour soup mixture over chicken and top with sautéed onions.
- Mix stuffing mix with melted butter and sprinkle evenly over the top.
- Bake uncovered for 45 minutes or until chicken is cooked through and stuffing is golden brown.
- Let rest for 5 minutes before serving.

- Use your favorite stuffing mix or homemade stuffing for added flavor.
- For extra crunch, broil the casserole for the last 2-3 minutes of baking.
- Add mushrooms or celery to the onion sauté for more texture.
