- 2 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup beef broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Fresh parsley, chopped (for garnish)
Instructions
- Cook Pasta: Bring a large pot of salted water to a boil and cook rigatoni according to package instructions until al dente. Drain and set aside.
- Sear Beef: Season beef pieces with salt and pepper. In a large skillet over medium-high heat, add olive oil and sear beef on all sides until browned, about 5-6 minutes. Remove from skillet and set aside.
- Sauté Aromatics: In the same skillet, add diced onion and garlic. Sauté for 3-4 minutes until softened and fragrant.
- Make Sauce: Pour in beef broth, scraping up any browned bits from the pan. Stir in heavy cream, Parmesan cheese, and Italian seasoning. Simmer for 5 minutes, or until the sauce starts to thicken.
- Combine Beef and Pasta: Return the beef to the skillet, add the cooked rigatoni, and toss everything together in the creamy sauce. Let it simmer for another 2-3 minutes to meld flavors.
- Serve: Garnish with fresh parsley and additional Parmesan if desired. Serve hot.
