Description

  • 12 oz rigatoni pasta
  • 1 lb beef sirloin or stew meat, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook Pasta: Bring a large pot of salted water to a boil and cook rigatoni according to package instructions until al dente. Drain and set aside.
  • Sear Beef: Season beef pieces with salt and pepper. In a large skillet over medium-high heat, add olive oil and sear beef on all sides until browned, about 5-6 minutes. Remove from skillet and set aside.
  • Sauté Aromatics: In the same skillet, add diced onion and garlic. Sauté for 3-4 minutes until softened and fragrant.
  • Make Sauce: Pour in beef broth, scraping up any browned bits from the pan. Stir in heavy cream, Parmesan cheese, and Italian seasoning. Simmer for 5 minutes, or until the sauce starts to thicken.
  • Combine Beef and Pasta: Return the beef to the skillet, add the cooked rigatoni, and toss everything together in the creamy sauce. Let it simmer for another 2-3 minutes to meld flavors.
  • Serve: Garnish with fresh parsley and additional Parmesan if desired. Serve hot.
