- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14 oz) diced tomatoes
- 1 cup heavy cream
- 1 1/2 cups short pasta (like elbow, shell, or ditalini)
- 1/2 cup Parmesan cheese, grated
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- 2 tbsp olive oil
- Fresh parsley, chopped (for garnish)
- Optional: red pepper flakes for a bit of heat
Instructions
- In a large pot, heat olive oil over medium heat. Add Italian sausage and cook until browned, breaking it up into small pieces. Drain excess fat and set aside.
- In the same pot, add diced onion and garlic, cooking for 2-3 minutes until softened.
- Stir in chicken broth, diced tomatoes, and Italian seasoning. Bring to a simmer.
- Add the pasta and cook for 10-12 minutes, until the pasta is tender.
- Stir in the cooked sausage and heavy cream, allowing the soup to heat through.
- Gradually stir in the Parmesan cheese, cooking for an additional 2-3 minutes until the soup is creamy and the cheese is fully melted.
- Season with salt, pepper, and red pepper flakes (if using) to taste. Garnish with fresh parsley and more Parmesan.
