Ingredients

  • 1 lb Italian sausage
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 1/2 cups short pasta (like elbow, shell, or ditalini)
  • 1/2 cup Parmesan cheese, grated
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)
  • Optional: red pepper flakes for a bit of heat

Instructions

  • In a large pot, heat olive oil over medium heat. Add Italian sausage and cook until browned, breaking it up into small pieces. Drain excess fat and set aside.
  • In the same pot, add diced onion and garlic, cooking for 2-3 minutes until softened.
  • Stir in chicken broth, diced tomatoes, and Italian seasoning. Bring to a simmer.
  • Add the pasta and cook for 10-12 minutes, until the pasta is tender.
  • Stir in the cooked sausage and heavy cream, allowing the soup to heat through.
  • Gradually stir in the Parmesan cheese, cooking for an additional 2-3 minutes until the soup is creamy and the cheese is fully melted.
  • Season with salt, pepper, and red pepper flakes (if using) to taste. Garnish with fresh parsley and more Parmesan.
