- 2 tablespoons butter
- 2 boneless, skinless chicken breasts, cut into tenders
- 1 teaspoon sea salt
- 1 teaspoon ground pepper
- 1 white onion, diced
- 2 tablespoons minced garlic
- 1/2 cup chicken stock
- 1/2 cup roasted red peppers, chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tablespoon Italian seasoning
- 1/2 cup pepperoncini peppers (sliced, rings, or whole, as desired)
Instructions
- Brown the Chicken: In a large, heavy pan, melt the butter over medium-high heat. Season the chicken with salt and pepper, then add to the pan. Brown the chicken on all sides, turning every couple of minutes for about 8 minutes total. (The chicken might not reach an internal temperature of 165°F yet, which is fine.)
- Sauté Aromatics: Remove the chicken from the pan and set aside. Add the diced onion and minced garlic to the pan and sauté for about 5 minutes until the onion is translucent.
- Make the Sauce: Add the chicken stock and roasted red peppers to the pan. Let the sauce reduce by half, about 5 minutes. Turn off the heat and slowly stir in the heavy cream and Parmesan cheese, whisking vigorously as you add the cream.
- Finish the Dish: Bring the heat back to medium-high. Add the Italian seasoning and pepperoncini peppers, along with the chicken. Let the sauce reduce by half and ensure the chicken reaches an internal temperature of 165°F. If the sauce is too thick, add more chicken stock to thin it out.
- Serve: Remove from heat and serve the creamy pepperoncini chicken over vegetables, pasta, rice, or enjoy it on its own.
Notes
- For a lighter version, you can substitute half-and-half for heavy cream.
- Feel free to adjust the level of pepperoncini to suit your taste.
