A flavorful and easy-to-make dish that combines tender chicken with a rich, creamy sauce featuring tangy pepperoncini and roasted red peppers. Perfect for a weeknight dinner!


Ingredients

  • 2 tablespoons butter
  • 2 boneless, skinless chicken breasts, cut into tenders
  • 1 teaspoon sea salt
  • 1 teaspoon ground pepper
  • 1 white onion, diced
  • 2 tablespoons minced garlic
  • 1/2 cup chicken stock
  • 1/2 cup roasted red peppers, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1/2 cup pepperoncini peppers (sliced, rings, or whole, as desired)

Instructions

  • Brown the Chicken: In a large, heavy pan, melt the butter over medium-high heat. Season the chicken with salt and pepper, then add to the pan. Brown the chicken on all sides, turning every couple of minutes for about 8 minutes total. (The chicken might not reach an internal temperature of 165°F yet, which is fine.)
  • Sauté Aromatics: Remove the chicken from the pan and set aside. Add the diced onion and minced garlic to the pan and sauté for about 5 minutes until the onion is translucent.
  • Make the Sauce: Add the chicken stock and roasted red peppers to the pan. Let the sauce reduce by half, about 5 minutes. Turn off the heat and slowly stir in the heavy cream and Parmesan cheese, whisking vigorously as you add the cream.
  • Finish the Dish: Bring the heat back to medium-high. Add the Italian seasoning and pepperoncini peppers, along with the chicken. Let the sauce reduce by half and ensure the chicken reaches an internal temperature of 165°F. If the sauce is too thick, add more chicken stock to thin it out.
  • Serve: Remove from heat and serve the creamy pepperoncini chicken over vegetables, pasta, rice, or enjoy it on its own.

Notes

  • For a lighter version, you can substitute half-and-half for heavy cream.
  • Feel free to adjust the level of pepperoncini to suit your taste.
