- 1 1/2 cups frozen peas
- 1/2 cup heavy cream (or coconut milk for a vegan option)

Instructions
- Sauté the Aromatics:
Heat olive oil or butter in a large pot over medium heat. Add the diced onion and sauté until softened and translucent, about 5 minutes. Stir in the garlic and cook for an additional 1 minute until fragrant. - Cook the Potatoes:
Add the diced potatoes, broth, thyme, salt, and black pepper to the pot. Bring to a boil, then reduce the heat to low and simmer for 15–20 minutes, or until the potatoes are tender. - Add the Peas:
Stir in the frozen peas and cook for 3–5 minutes, just until heated through. - Blend the Soup:
Use an immersion blender to puree the soup directly in the pot for a creamy texture. Alternatively, transfer the soup in batches to a blender and blend until smooth. For a chunkier texture, leave some of the soup unblended. - Finish with Cream:
Stir in the heavy cream (or coconut milk) and adjust the seasoning with more salt and pepper, if needed. Heat the soup gently for 2–3 minutes, but do not let it boil. - Serve:
Ladle the soup into bowls and garnish with fresh parsley or chives. Serve warm with crusty bread or crackers.
