Description

This hearty and comforting creamy potato and hamburger soup is made in the crockpot, featuring tender potatoes, flavorful ground beef, and rich cheese. Perfect for busy weeknights!


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups diced potatoes
  • 4 cups beef broth
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup frozen corn kernels
  • 1/2 cup frozen peas
  • 1/2 cup diced carrots
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  • In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add chopped onion and minced garlic to the pot with the beef. Sauté until the onion is translucent.
  • Stir in diced potatoes, and pour in the beef broth. Bring the mixture to a boil, then reduce heat and simmer until potatoes are tender.
  • Add milk, shredded cheese, corn, peas, carrots, thyme, and rosemary. Cook on low heat until the cheese is melted and vegetables are cooked through.
  • Season the soup with salt and pepper to taste. Serve hot, garnished with chopped parsley if desired.
