4 large russet potatoes, peeled and thinly sliced

Instructions

Preheat Oven:
Preheat your oven to 375°F (190°C). Grease a muffin tin or a similar small baking dish with butter or non-stick spray. -
Prepare Potatoes:
Using a mandolin or sharp knife, thinly slice the potatoes (about 1/8-inch thick). Try to keep the slices as even as possible. -
Make Creamy Mixture:
In a bowl, mix together the heavy cream, melted butter, garlic powder, thyme, salt, and pepper. Stir in half of the grated cheese. -
Assemble the Stacks:
Layer the potato slices into the muffin tin, stacking them upright so they stand on their edges. Drizzle the creamy mixture over each stack, making sure the cream is absorbed into the layers of potatoes. Repeat until each stack is filled. -
Top with Cheese:
Sprinkle the remaining grated cheese on top of each stack. -
Bake:
Cover the muffin tin with aluminum foil and bake for 45 minutes. After 45 minutes, remove the foil and bake for an additional 20 minutes, or until the potatoes are tender and the cheese on top is golden and bubbly. -
Serve:
Allow the potato stacks to cool for a few minutes before carefully removing them from the tin. Garnish with fresh parsley if desired, and serve.
